Blueberry x Oatmeal Breakfast Muffin

We are now coming to the end of September and with it the end of our Self Improvement Month adventure. We must say there is so much all of us need to improve on. From our health choices, to our self image, to how we treat others. Many times we get into bad habits or hold on to old bad habits. For some we simply can't see our flaws but for others you may notice what you need to improve on but as the popular saying goes, "the heart is willing but the flesh is weak". We may apologize those we hurt, we may apologize to ourselves, we may even say "I will definitely work on that!". But life is hard and changing certain habits can seem almost impossible. 

 

Through our adventure of Self Improvement Month we can first hand state that yes it is difficult but not impossible. Some of us here are trying to become more social; others have taken on the task of trying to relax more, and through each failure we are growing. That's what we have learned about Self Improvement Month, failing in an attempt to change or grow isn't really a fail but a stepping stone to greatness.

 

So for our last September Self Improvement Month post we baked up a batch of bluberry and oatmeal muffins. A healthy treat for a brighter tomorrow!

 

Ingredients:

  • 14 cups old fashion oatmeal
  • 1cups flour
  • 1cup sugar
  • 1tablespoon baking soda
  • 1teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1cup oil
  • 3cup fresh blueberries

 

 

 

DIRECTIONS

  1. Preheat oven to 425 degrees.
  2. Combine oats, flour, 1/3 sugar, baking powder and salt in a bowl.
  3. In another bowl, combine milk, egg and oil.
  4. Add liquid ingredients to the dry ingredients, mix until moist only.
  5. Fold in blueberries.
  6. Fill greased muffin cups 2/3 full.
  7. Mix topping ingredients.
  8. Bake 20- 25 minutes.
  9. Serve warm.

 

And there you have it! Delicious moist and healthy breakfast muffins that fill your home with a sweet baking aroma! To make it extra healthier, some replace the egg and oil with unsweetened applesauce. This will reduce cholestoral!
